I used to think that was Adam playing guitar but every live video I've seen, they don't play it or Maynard sings it. What instrument was used for this and who played it?

If you listen to that part backwards, it actually sounds like a normal violin or something. And further evidence of there being reversed sounds is that when listening to is backwards, you hear a 'phrase' of the instrument identical to one that you hear when listening to the song normally.
