quickest and easiest way is from Port Authority(42nd Street), NJ transit 351 bus to Meadowlands. Round trip is $9, you can buy a ticket from one of the automatic machines or at the NJ Transit window from a teller, the busses will line up either at a gate or more likely in the tunnel between the North and South building. Coming back is easy too, they have the busses line up right in the area where you got dropped off(near gate C I believe).

edit- the trip usually takes about 20-30 minutes.
